It’s time for yet another “What I ate today” post! This is my favourite way to give those who are either transitioning, or skeptical of a vegan lifestyle an insight to what us plant munchers eat!
I cannot tell you how many times I have heard vegan diets are deficient, restrictive, unsatisfying and just plain boring! It is so easy to take all of your favourite foods and put a healthy spin on them.
I will say that I eat pretty bland foods and I enjoy a lot of mono meals because that is what works for me. I choose to eat low fat, primarily raw foods because that is what keeps my body energized and my skin glowing! However there are many different types of vegans; fully raw, starch based, cooked only, high fat, low fat…heck there are vegans who basically live off of junk food!
Choose what works for you. Whether that be eating tons of fruit, veggies, and potatoes like me, or eating tofurkey and daiya cheese. Branch out and try eating mono meals, try eating 100% raw. Whatever makes you feel optimal, sustainable, and flexible, stick to it!
Breakfast One mini watermelon
I always used to start my day with a green smoothie. Now the only thing I crave when I wake up in the morning is watermelon! Watermelon is so hydrating and nutritious, it’s really the perfect breakfast food. It’s super easy too, all you have to do is cut it in half and eat it with a spoon! This morning I only had one watermelon in my fridge so it didn’t sustain me for long, usually I would have two or three to make it a complete meal.
Second Breakfast: Neapolitan nice cream
I waited about a half an hour for my watermelon to digest and then made some heavenly ice cream! This really hit the spot. It was so yummy that I think it deserves a blog post of it’s own so stay tuned…This was about 7 bananas worth of ice cream.
Lunch: White Basmati Rice
I prefer to eat fruit meals throughout the day, but I thought I would change it up a little! It was storming all day so something warm for lunch sounded appealing, and I seriously need to go for groceries! White basmati rice is my favourite! There is a whole controversy about white rice vs. brown rice and my perspective is that brown rice just has more fibre. Brown rice also contains a little bit more fat. I eat and enjoy them both so there is no need to be afraid people!
Dinner: Fries w/guacamole
For dinner I chopped up 5 white potatoes and one sweet potato (not pictured). Then was feeling a little extra funky (interesting descriptive word, I know) so I whipped up a batch of guacamole. Simply 1 small avocado blended with lemon juice, cracked black pepper, a pinch of garlic powder and the teeniest bit of cayenne. Super satisfying, and it won’t make you feel tired or sluggish. With all of the carbohydrate/sugar rich food I eat throughout the day I never feel tired come nighttime! I actually find I have more energy later in the day, which for me is great because I usually have lots of homework to do and I love going running at night.
