You do not even know how much this excites me. I mean, excitement is an understatement!
Spring has sprung and summer is on it’s way. That means more fresh fruit and more banana ice cream.
Last summer I lived off of banana ice cream and I felt amazing! There’s something appealing about ice cream all day, everyday, no? That’s why I felt obliged to step it up a notch. My cookie dough sundae was pretty extraordinary but there was something I had yet to create…
Nice cream sandwiches.
I remember when I was about 5 years old, right after swimming lessons I would always ask my mom if I could get a ice cream sandwich from the vending machine. Good times…but bad decisions. Filled with trans fats, processed ingredients, artificial dyes, definitely not what I would consider proper ‘fuel’ after a workout. Alas, they made little 5 year old me happy. 🙂
And now these make 16 year old me very happy! Creamy strawberry nice cream sandwiched between two raw chocolate ‘cookies’. They practically scream summer!
Sans artificial colourings, sugars, unhealthy fats and preservatives. Filled with wholesome ingredients and love. Just eat plants okay?
v, gf, low fat, refined sugar free
-3 frozen bananas
-1/2 cup chopped frozen strawberries
-1 tsp. pure vanilla extract (or vanilla bean)
Raw chocolate cookie sandwiches:
-8 Medjool dates, pitted
-2 tbsp. cacao powder
-1/4 cup almonds
-1 tbsp. coconut flour
-1/2 tsp. almond extract
First prepare the sandwiches. Add all ingredients to a food processor and blend until combined into a paste. Place the dough in-between two pieces of wax paper. Flatten with either a rolling pin or your hands. Take a circular cookie cutter or simply a glass and cut your dough into rounds. Repeat until all the dough is used up and place in the freezer while you make the ice cream. For the ice cream: Take your bananas and add to a food processor or high sped blender like a Vitamix. Blend just until the bananas are ‘crumbly’. Add the strawberries and vanilla extract and continue blending until creamy. Take your cookies out of the freezer and simply scoop some ice cream in-between!
