Coconut-Cacao Smoothie Bowl

Smoothie bowls.

It’s like if a smoothie and banana ice cream had a baby.

Creamy, decadent, very photogenic and perfect for those of you who are like me and have a certain condition called chronic indecisive-ness…if that’s a word.

This was easily the best lunch I ever had and it would just be pure evil for me to not share the recipe with you!

But be warned, this right here is addictive. Proceed with caution.

Serves 1

v, gf, refined sugar free

Ingredients:

-3 frozen bananas

-Meat from one young coconut

-2 tbsp. cacao powder

-1 tbsp. coconut sugar

-Half of the water from one young coconut (approx. 1 cup)

Topping ideas: Chia seeds, coconut chips, fresh fruit, cacao nibs, raw cookie dough snowballs or rawnola

Method:

In a high speed blender or food processor combine the bananas, coconut meat and coconut water. Blend until halfway smooth and add in the cacao powder and coconut sugar. Blend on high until combined and creamy. Add more or less liquid as needed. If you want it to be more creamy, I suggest using a dairy-free milk like almond or coconut. The texture should be thick enough to eat with a spoon but thin enough so that you can pour it out of the blender.
