Creating a successful recipe is a trial and error process. As a vegan food enthusiast I can only hope that my recipes turn out delectable on the first try, but that often doesn’t happen.
Except with these:
I threw a bunch of ingredients into a bowl and whipped these up in under a half an hour and poof! Magic.
When I took my first bite my initial reaction was “Well, that’s different…” Then, I chewed some more and instantly it changed to “It’s a good different…oh my god a really good different!” And then I drizzled some raw chocolate over top and I was sold.
But that was my reaction. I sent a picture of these to my best friend and her exact words were: “It looks like earth.” Now, I take that as a compliment but I also consider the fact that I have extremely odd taste buds and not everyone is infatuated with eating green food.
These bars are a prime example of one of when you eat something and at first are disgusted but then it basically becomes your crack. Yeah, that’s about right.
The ingredient in these bars that gives them their glorious colour is wheatgrass powder. Wheatgrass is like the god of chlorophyll, it contains every single mineral known to man, is rich in vitamins A, B-complex, C, E, K and is a source of protein complete with 17 different amino-acids.
I bet these bars just got a whole lot more appealing to you.
Because elf all these rich nutrients wheatgrass is an effective healer decreasing inflammation, improving digestive health, increasing energy levels and possibly can even prevent and treat cancer due to it’s high content of oxygen.

Makes 6 bars
v, gf, refined sugar-free, extremely delicious
-1 cup gluten-free oats
-2 tbsp. pumpkin seeds
-1 tbsp. sunflower seeds
-1 tbsp. chia seeds
-1 tsp. wheatgrass powder (sprulina or chlorella)
-1/8 tsp. allspice
-1/3 cup almond butter
-1/3 cup agave nectar (sub. maple syrup)
-1/2 tsp. almond extract
-1 tbsp. coconut oil
-1 tbsp. cacao powder
-1 tsp. agave nectar (sub. maple syrup)
In a large bowl mix together the oats, pumpkin seeds, sunflower seeds and chia. In a small saucepan on medium heat simmer the almond butter, agave until combined. Turn off the heat and add in the almond extract. Pour the mixture over the dry ingredients and mix thoroughly. Finally, add in the wheatgrass and the allspice and stir until evenly coated green. Spoon into a small glass dish lined with parchment paper and firmly press into a square. For the chocolate coating: Melt the coconut oil in the microwave in a small ramekin. Add in the cacao powder and sweetener and stir until smooth. Take your bars out of the freezer and drizzle the sauce over top and leave to set in the freezer for 10 minutes. Once set, slice your bars into your desired shape, size and store in the refrigerator.
