So I am back from Hawaii…can you guess the first thing I did when I got home?
If you guessed “made banana ice cream” you guessed correctly!
My original nice cream recipe has always been my go to because it’s low in fat and packed with wholesome nutrients that make it great for any time of the day. However you need to indulge a little sometimes yes?
I have never been a huge choco-holic which I find odd because my mom can’t survive without her daily fix. To each their own I suppose!
Bring in the Banoffee nice cream.

I have never actually had this traditional treat “Banoffee pie” but the idea seemed to my par and I figured what could be a better flavour than bananas and toffee? Luckily I bought some english toffee stevia drops awhile back so I had no excuse.
This nice cream is extra creamy and will leave you wanting more. Which is perfectly fine because it’s healthy, the sky is the limit!
v, gf, refined sugar free
-3 frozen bananas
-1/4 tsp. of cinnamon
-1-2 tbsp. of peanut butter (adjust to your preferences)
-1 tbsp. coconut sugar
-5-10 drops of english toffee sweet drops (again adjust depending on your taste buds)
-Optional: Raw maca powder, peanuts for topping
Let the bananas thaw slightly before putting into your food processor or high speed blender, this way you won’t have to add any liquid. Blend on high and when halfway smooth add in the peanut butter, coconut sugar, cinnamon and sweet drops. Blend until completely combined and serve immediately.

See? There are better things than chocolate. It’s true. But cacao nice cream does pair really well with this…who says you can’t have both?
