Blueberry Açai Bowl

Hello my dear readers!

First let me start off by apologizing for my absence! If you don’t follow me on Instagram you may not know that I am currently in Hawaii! So for that reason I haven’t been able to write a lot of blog posts. Today is exceptionally cloudy so I thought that it would be the perfect opportunity to do so!

Here in Oahu there are multiple juice/smoothie bars and my absolute favourite is Lanikai Juice (it’s like my crack, seriously). They have an array of smoothies, juices and of course…

They have Pitaya bowls too, but let’s just focus on the açai for today. 😉

A few weeks ago I spent an astronomical $25 on a mince bag of freeze dried açai and let me tell you, it’s good stuff. Now with that said I do prefer the açai puree, but it’s not always accessible so this is a good backup.

Açai comes for the açai palm tree, which is native to the Amazon rainforest region. Açai berries have been proven to have multiple antioxidants surpassing other berries such as blueberries, strawberries and raspberries.

acai-palm-treeAnthocyanin, a nutrient which is found rich in many red an purple berries is supposedly the ‘driving force’ behind açai’s free-radical fighting and anti-aging properties. To boot, açai has an ORAC (Oxygen radical Absorbency Capacity) of over 3500, which is more than your typical banana or apple.

Talk about a super fruit huh?

You also might be surprised that açai also packs more protein than an egg. Another win for us vegans! 😉

Serves 1

v, gf, refined sugar-free, low fat

Ingredients:

-3 frozen bananas

-1 cup blueberries (can sub any other dark berry)

-3 heaping tbsp. freeze dried açai powder

-1/2 cup almond milk

Optional toppings: strawberries, raspberries, goji berries, cacao nibs, almond butter, pineapple, rawnola.

Method:

Blend the bananas, blueberries and almond milk in a food processor or high speed blender until halfway smooth. Add in the açai powder and combine until smooth. Add more or less liquid as needed. It should be thick enough that you need a spoon to eat it, but thin enough that you can pour it straight from the blender. Add your toppings and enjoy!
