Diamonds are a girls best friend?

I’m sorry, but if diamonds are your best friend then cleary you have never had a raw vegan truffle.

I mean I can see why you wouldn’t want just any ordinary truffle to be your bff. All the unnecessary fat and sugar, that sounds more along the lines of frenemy!

But with these chocolate truffles you might want to get married. If that’s physically possible of course…

These truffles are made with cacao instead of cocoa and are naturally sweetened with gooey Medjool dates. These also aren’t your typical truffles they have a bit of crunch to them to satisfy all your needs.

Sounds like the perfect Valentine’s date no?

Makes 8 truffles

Raw Vegan Truffles

vegan, raw, gf, refined sugar free, low fat

Ingredients:

-10 Medjool Dates pitted

-2 tbsp. cacao powder plus more for rolling

-2 tbsp. cacao nibs (or carob nibs)

-2 tbsp. vegan chocolate chips (or more cacao nibs)

-1 tbsp. softened coconut oil

Optional: 1/4 tsp sea salt

Method: 

Prep: Soften the coconut oil slightly for about 10 seconds in the microwave.

In your food processor add the dates, cacao powder and coconut oil (and salt if your using it). Pulse on high for a few seconds and once it is almost combines add in the cacao nibs and chocolate chips and blend until a smooth paste forms. Roll your dough into balls and place them on wax paper. Lightly dust the balls with cacao powder and store in the refrigerator for up to one week.
