One gloomy day there was four Medjool dates.
These were not your ordinary dates, they were special unlike the rest; very fresh and extra chewy. Little did these dates know, that one day they would finally be taken out of the pantry to be created into the most delectable treat!
These dates now reside happily in my stomach, may they rest in peace.
Okay, so i’ve read better stories. Terrible anecdotes aside, this might possibly be the best recipe (and the most simple recipe) I have ever created!
There were just these four dates chillin’ in my pantry and I had no clue what to do with them!
I then got the idea to stuff them with peanut butter because I always see others doing that but have never tried it myself. However, I decided it was not enough.
So: I popped them in the freezer, melted some chocolate and dipped them in it…
That’s how I feel about these, speechless (how big is my ego right now?).
Simple and sweet, just how I like it.
gf, vegan, refined sugar free, and just plain awesome
-4 Medjool dates (you can obviously use more but this was all I had on hand!)
-4 tsp. peanut butter
-1/4 cup vegan chocolate chunks
-2 tsp. coconut oil
Slice your dates down the middle and remove the pit (don’t cut them completely in half). In the centre fill each date with 1 tsp. of peanut butter. Once done place them in the freezer to harden up while you make the chocolate sauce. For the sauce: Melt the chocolate chunks and coconut oil in a small ramekin and stir it all together. Bring your dates out of the freezer and poke each with a toothpick. Evenly coat the dates with the sauce and place on wax paper. Leave in the refrigerator for up to 2 weeks.
I will never again question the power of the Medjool date.
