Wait for it…
COOKIE DOUGH SUNDAE!!!
*cue hallelujah choir*
Believe me, even to all of you junk food junkies out there, THIS is the real deal.
Makes 1 Sundae
gf, vegan, refined sugar free
-4 frozen bananas (yes, four.)
-1 tsp. vanilla bean powder (or a scraped vanilla bean pod or vanilla extract)
Double chocolate variation: Just add a tablespoon of cacao!
-1/4 cup of oat flour (simply, ground up oats)
-1 tbsp. virgin coconut oil, melted
-1 tbsp. pure maple syrup
-1 tsp. vanilla extract
-2-3 tsp. dairy free chocolate chips or cacao nibs
Hardening Chocolate Shell:
-2 tbsp. virgin coconut oil melted
-1 tbsp. cacao (or carob) powder
-2 tsp. pure maple syrup
First, the cookie dough! In a small bowl, add the oat flour and melted coconut oil. Then, mix in the maple syrup and vanilla extract. Once combined, stir in the chocolate chips and set aside to firm up.
Next, the ice cream! Blend the bananas in a food processor or high speed blender. Halfway through, add in the vanilla and blend until creamy. Add a bit of liquid of needed. Once done scoop into a bowl.
Finally for the sauce, melt the coconut oil. Once melted stir in the cacao powder and maple syrup. Mix it up until no chunks are visible. Pour the sauce over the ice cream and wait about 20 seconds for it to harden. Then, take your chunks of cookie dough and add it to your sundae. I also topped mine with cacao nibs. Fresh cherries or strawberries would be yummy too!
This sundae right here is proof that you don’t need dairy to make a delectable treat.
