Banana Bread Oatcake

For the past while now my everyday go to breakfast has either been a litre of orange juice or a banana smoothie.

Now that I am experimenting with warm, cooked foods I opted for some traditional oatmeal.

But knowing me, it’s not going to be just any boring bowl of oatmeal…

IMG_2985This my friends, is like eating a creamy coconut banana oatcake.

Cake for breakfast? Anyone?

Chewy on the outside and warm gooey on the inside. This should be the only way to start your day!

Recipe:

-1/2 cup of rolled oats

-1 small (or 1/2 a large) ripe banana mashed

-1/2 tsp. cinnamon

-2 tsp. coconut sugar

-1 tbsp. coconut butter

-1 tsp. vanilla

-3 tbsp. dairy free milk

Preheat oven to 380 degrees. Combine dry ingredients and then mix in the wet. Pour into a small ramekin or mini loaf pan. Make sure to grease your pan or ramekin if you want the cakes to pop out. Bake for 15-20 minutes.

I topped my lovely oatcake just before I put it in the oven with more sliced banana and once I took it out I swirled some fresh cashew cream on top.

Maybe this whole experimental diet thing isn’t all that bad. I mean I haven’t sat by the fireplace once today! It is only temporary and at least I can still cook my fruit. The Potassium Princess lives on!
