Raw Gingerbread Cookies

I always loved making gingerbread houses and cookies during this time of year, but I must admit, making a vegan gingerbread house is very hard.

I was lucky enough to find one at Whole foods last year and even that completely collapsed on me!

Nonetheless, I resorted to making some raw gingerbread cookies instead. Just as tasty and 100 times healthier than the traditional holiday cookie.

Ginger is a great addition to any diet: It aids in colon health and can reduce muscle pain when taken daily by 25%! It has also been proven to help in treating cancer and hypertension.

Whether you prefer it in a powder form or its raw form, ginger should be a staple spice in your kitchen!

Raw Gingerbread Cookies

Recipe:

-10 pitted medjool dates

-1/4 cup of mixed walnuts and pecans

-1/2 tsp. ginger

-1/2 tsp. cinnamon

-1/4 tsp. nutmeg

-1/8 tsp. ground cloves

-2 tsp. coconut sugar

-Optional: sea salt

Instructions:

Throw all ingredients into your food processor and pulse on high. Place the dough onto wax paper Β and then place another layer of wax paper over the top. Roll out with a rolling pin and either use a cookie cutter for shapes or form into circles or squares, whatever you prefer! I even made some into little balls, rolled them in coconut and made a gingerbread snowman!
