Raw Peppermint Brownie Bites

The holidays have begun in my house, the first snow of the year has fallen and december is finally here!

I have yet to start my christmas shopping though… :/

However, I am never late on the baking part (the best part), but this year I had no clue what to make.



So, behold raw peppermint brownie bites!

I officially declare this as my signature holiday treat. It is so decadent and naughty you won’t want to be nice. πŸ˜‰

Raw peppermint brownie bites


Brownie Base:

-1/2 cup pecans

-1/2 cup of oats

-10 pitted medjool dates

-1/4 tsp. sea salt

-3 tbsp. cacao powder

-1/2 tsp. pure peppermint extract

-2 tbsp. water


Process the nuts until they form a fine meal. Remove and place into a bowl and blend the dates until they form a paste. Add the nuts and the rest of the ingredients and press the dough into a small baking dish if you want normal sized brownies or into little muffins forms for small bite sized brownies like I did. Put in the fridge for a couple of minutes while you make the top layer.

Coconut Bark Frosting:

-6 tbsp. coconut butter

-1/4 cup coconut oil

-2 tbsp. pure maple syrup

-1 tsp. pure peppermint extract


Heat the coconut butter and oil on low just until they liquify stir in the remaining ingredients, you will have to work fast to assure that the oil doesn’t harden again. Pour atop the brownie layer and set in the fridge or freezer if you want to eat it sooner. Believe me, you will want to.

Feel free to top it with crushed candy canes for a more festive feel!

These are a winner in my book. I don’t know what to make next now! Raw gingerbread men…Nanaimo bars?
