I remember eating kraft dinner when I was younger and I thought powdered cheese was totally normal!
Little did I know, that I wasn’t even eating real food…
This mac n’ cheese, tastes like real food.
…Oh wait, it is real food.
I mean, sue me for preferring to eat things that come from the earth instead of a lab…
Spicy Vegan Mac n’ Cheese
soy free, gluten free, low sodium, low fat, high in B12 and absolutely no cheese!
-1 1/2 cups of corn macaroni pasta (can sub for regular.)
-2/3 cup of nutritional yeast
-2 tbsp. potato starch
-1/2 tsp. dry mustard powder
-1/4-1/2 tsp. of turmeric (I use 1/2)
-1/2 tsp. paprika
-1/4 tsp. of garlic powder (you can use fresh garlic as well)
-Dash of black pepper
-1/2- tbsp. of tahini
-1 cup of water
-1/2 cup of unsweetened, unflavoured almond milk (or more water, you really can’t taste the difference.)
Heat your water and bring it to a boil then add the pasta. While the pasta is cooking add all ingredients to a food processor or blender and combine. Drain your pasta once it is cook and on low-heat add the sauce and stir frequently. It may look water-y but thanks to the potato starch in just a few minutes it will start to thicken!

You see? Who needs cheese! I always used to eat Daiya cheese, and there’s totally nothing wrong with that, but after buying nutritional yeast for the first time, I was completely mind-blown!
