Peanut Butter Chocolate Chunk Cookies

I think these are the best vegan cookies I have ever made!

Wait, scratch that. These just are the best cookies, period.

All the vegan cookies I have ever made always come out crunchy and not to mention small. These are perfect and fluffy.

But unfortunately I cannot take the credit. The genius behind these is no other than @plantbasedjudy on Instagram or check out her youtube channel!

Plant Based Judy’s Peanut Butter Chocolate Chunk Cookies

(makes approx. 12 medium size cookies)


– 2 cups dry oats
– 3/4 cup gf flour (can substitute with wheat flour if not gf)
– 1/2 cup coconut sugar
– 1/2 cup pure maple syrup
– 3 1/2 tbsp. peanut butter
– 1 tsp. cinnamon
– 1 tsp. baking soda
– Tiny splash of dairy free milk (1-2tbsp)
-1/2 cup vegan chocolate chunks (such as Enjoy Life)


Preheat the oven to 350 F. Add all ingredients except chocolate chips to a food processor or bowl and mix it up! Line a baking sheet with parchment paper and spoon the dough onto the sheet. Place however many chocolate chunks on the cookies as you desire. Bake for 10-15 minutes.
