I don’t know about you but I am partial to the colder months. Despite my infatuation with Hawaii (and the fact that I have been there more than you can count on four hands), my everlasting love for a bronze tan and golden locks, I could not live without the red autumn leaves, rainy days cuddled up by the fireplace and the first snow of December.
Speaking of snow…
Raw. Vegan. Cookie. Dough. Snowballs.
I happen to be one of those odd people who never gets sick of the the crisp white blanket that covers the ground. Although, if you truly hate snow or rather, being pelted with snowballs…I assure you these will change your mind.
Chilled…chewy…sweet…cookie dough…Have I convinced you yet? 😉
Raw Cookie Dough Snowballs Recipe:
(Makes about 16 medium cookie dough balls)
-Approximately 20 Pitted Medjool dates
-2/3 cup of raw, unsalted cashews (you could sub almonds, walnuts etc. If you are allergic to nuts, you can leave them out entirely.)
– 1 tsp. Almond extract
-1 tsp. Vanilla Extract
-Dairy-free chocolate chips (such as Enjoy Life)
If your dates are not already pitted, go ahead and do so and throw the dates in the food processor along with the nuts. Pulse on high until the nuts and dates combine to form a paste. Add in the extracts and blend for a few seconds. Place the mixture on a sheet of wax paper and fold in as many chocolate chips as you desire. Separate pieces of the dough and roll into balls. Finally, roll the balls into coconut and store in the refrigerator.
